Ingredients:
For the Dough:
- 240 ml of plant-based milk (e.g., almond, soy, or oat milk)
- 50 grams of granulated sugar
- 1 packet (7 grams) of active dry yeast
- 80 ml of vegetable oil (e.g., canola or coconut oil)
- 450 grams of all-purpose flour
- 2.5 grams of salt
For the Filling:
- 75 grams of vegan butter (melted)
- 150 grams of brown sugar
- 10 grams of ground cinnamon
For the Baked Apple Topping:
- 4-5 peeled apples, sliced
- 50grams of granulated white sugar
- 15ml of vegetable oil (e.g., canola or coconut oil)
Instructions:
1. Prepare the Dough:
- In a small saucepan, heat the plant-based milk until it's warm but not boiling.
- Pour the warm milk into a mixing bowl, add the sugar, and sprinkle the yeast over the surface. Let it sit for about 5-10 minutes until it becomes frothy. This means the yeast is active and ready to use.
- Add the vegetable oil, salt, and half of the flour to the yeast mixture. Stir until combined.
- Gradually add the remaining flour and knead until a smooth dough forms.
2. First Rise:
- Place the dough in a lightly oiled bowl, cover it with a clean kitchen towel, and let it rise in a warm, draft-free place for about 1-2 hours or until it has doubled in size.
3. Baked Apples:
- Heat a skillet or pan over medium heat and add the 15 ml of vegetable oil.
- Add the sliced apples and sprinkle them with 80g of sugar.
- Fry the apples, stirring occasionally, until they become tender and slightly caramelized, which should take about 5-7 minutes. Pour the caramelized apples into a slightly oiled baking form, or you can use a baking sheet.
4. Roll Out the Dough:
- Roll the dough into a large rectangle (approximately 30x40 cm).
5. Add the Filling:
- Brush the melted vegan butter over the dough.
- In a small bowl, mix the brown sugar and ground cinnamon. Sprinkle this mixture evenly over the dough.
6. Roll Up the Dough:
- Carefully roll up the dough from the longer side, creating a log.
7. Slice the Rolls:
- Use a sharp knife or dental floss to slice the log into 12 even rolls.
8. Second Rise:
- Arrange the rolls over your caramelized apples
- Cover it and let the rolls rise for about 30 minutes.
9. Preheat and Bake:
- Preheat your oven to 175°C (350°F).
- Bake the entire dish for about 20-25 minutes, until the rolls are golden brown.
